Steve Wilkinson's Tabouli

errata: I used to give credit to Barb Phillips, Steve's wife. When he heard about the monstrous royalty checks I was sending her, he became outraged, and demanded that I give him the proper credit (and fortune) he was due. Steve, this is for you!

    1 cup dry bulgar wheat
    1 1/2 cups boiling water
    1 1/2 tsp salt
    1/4 cup fresh lemon or lime juice
    1 heaping tsp crushed fresh garlic
    1/2 cup chopped scallions (include greens)
    1/2 tsp of dried mint or chopped fresh mint leaves to taste
    1/4 cup olive oil
    2 medium tomatoes, diced (Steve has gotten by with less)
    1 cup freshly chopped parsley
    Fresh black pepper
Combine bulgar wheat , boiling water and salt in a bowl. Cover and let stand 15 to 20 minutes or until bulgar is chewable. Add lemon juice, garlic, oil and mint and mix thoroughly. Refrigerate 2 - 3 hours. Just before serving add the vegetables and mix gently. Correct the seasonings.

Note: don't try to whip this up at the last minute. You do have to refrigerate for 2-3 hours -- the bulgar needs to be thoroughly marinated and chilled.
