Zuccini Bread
This recipe is from Donna Longley, attributed to Rachel Eyre. How can one go wrong?
Donna says: "This is a zuccini loaf recipe I got from Rachel several years ago.
I have never put in the cherries but I expect they add to the taste."
Ingredients:
- 3 eggs
- 1 3/4 cup sugar
- 2 cups of grated zuccini squash
- 3/4 cup vegetable oil
- 2 teaspoons vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup crushed pineapple (drained)
- 1 cup walnuts, chopped finely
- 12 or so maraschino cherries (optional)
Makes two loaves
Bake at 350 deg. for one hour
